Making minced meat roll with filling:
Step 1: prepare the pork.
We thoroughly wash the pork under running water and put it on a cutting board. Using a knife, we clear the meat from the veins and the film. Now cut the component into medium pieces and transfer to a large bowl.
Step 2: prepare the beef.
We wash the beef well under running warm water to wash away the remnants of dirt and splinters from bones. Now put the meat on a cutting board and, using a knife, remove the veins and the film. Cut the component into small pieces and transfer to a bowl of pork.
Step 3: prepare the onion for the roll.
Using a knife, peel the onion from the husk and thoroughly rinse it under running water. Next, lay out the component on a cutting board and finely chop into cubes. Pour the chopped onions into a clean plate.
Step 4: prepare the milk.
Pour half a glass of milk into a Turk and put on a big fire. In 2 minutes turn off the burner and immediately proceed to the preparation of bread.
Step 5: prepare the loaf.
We tear the baton with clean hands into small pieces and put it into a small bowl. Pour bread with hot milk and leave for 5 minutes aside. After the allotted time, the loaf should become soft and supple. Using a fork, we carefully crumple it to a homogeneous mass.
Step 6: prepare minced meat for roll.
Before forming the roll, we need to grind the meat. We can do this in two ways. The first is to use a meat grinder with a fine grill and grind pieces of pork and beef in turn. And to make the stuffing homogeneous, it is best to do it twice.
I prefer the second option of chopping meat - using a blender. To do this, put the components in a bowl and chop them at high speed or Turbo mode to a homogeneous mass.
We transfer the prepared minced meat back to a large bowl and add the bread mass, chopped onion, eggs, as well as salt and a mixture of ground peppers to taste. With clean hands, mix everything thoroughly until a homogeneous mass is formed. Attention: from this amount of minced meat should be 3 medium rolls.
Step 7: prepare the carrots.
With a knife, peel the carrots and rinse well under running water. Now, using a coarse grater, grind the vegetable on a flat surface and immediately pour the chips into a clean plate. Attention: carrots can not be added to the filling. This is according to your desire.
Step 8: prepare onions for the filling.
Using a knife, peel the onion from the husk, rinse it under running water and put it on a cutting board. We grind the component into cubes and immediately pour it into a plate, where there was an onion prepared for minced meat.
Step 9: prepare the champignons.
The mushrooms are well washed under running warm water and put on a cutting board. With a knife, we clean the mushrooms from damaged places that can be on hats and legs. Now chop the ingredients in small pieces and pour into a clean small bowl.
Step 10: prepare the filling.
Pour a little vegetable oil into the pan and put on medium heat. When it warms up well, pour the chopped onion here. From time to time, stirring with a wooden spatula, bring the component to transparency. Now pour the carrot chips into the container and continue to cook the frying. When the vegetables are soft, put the crushed champignons here. Do not forget to stir in the improvised inventory (so that the components do not burn at the base of the pan), fry the filling to a soft golden color. At the end, turn off the burner and let the vegetables and mushrooms cool down a bit.
Step 11: prepare the minced meat roll with the filling.
We cover the kitchen table with a piece of baking paper. On top of it we lay out the minced meat and roll out the cake with the help of a rolling pin. Important: so that the meat mass does not stick to the inventory, be sure to pre-wet it under running water. You can also spread the stuffing on paper with clean hands. The main thing is that the cake is thick no more than 1 centimeter and had a square or rectangular shape.
Using a tablespoon, spread the filling on top so that it does not reach the edges 1.5 centimeters.
Now gently wrap the meat layer inward, lifting the baking paper. We pinch the edges with clean hands and turn on the oven. When it warms up to temperature 200 ° C, start to cook our roll. Carefully shift it with the seam down onto a baking sheet covered with food foil. In some places, pierce the dish with a fork and pour everything with the remaining milk (this must be done in order to make the meat appetizer tender and juicy). Next, put the pan on the middle tier and bake the roll for 30 minutes. Attention: From time to time it is necessary to take out the container with the help of kitchen gloves and pour the milk over the dish.
Then, on top, you get a ruddy, not a dry crust. At the end, turn off the oven, and take out the pan and set aside. Let the roll calmly reach room temperature. Before serving, we cut it with a knife into portioned slices, put on a special plate and put on the dining table, optionally decorating with parsley leaves and dill branches.
